SENSORY ANALYSIS
Straw-yellow color with greenish highlights; fresh aroma with hints of white and yellow flowers; fruity, pleasant, and persistent taste.

VARIETY: Pecorino
SOIL: Clayey, southwest-facing.
VINIFICATION: Gentle pressing, and fermentation in temperature-controlled stainless steel tanks. Fermentation temperature: < 20°C. Fermentation duration: 12 days. Rest on fine lees for 4 months.
ALCOHOL: 14.5%
